To you, who are interested in fine foods, Virginia Association for Family and Community Education, formerly Virginia Extension Homemakers Council and The Virginia Federation of Home Demonstration Clubs, presents this collection of recipes from country kitchens of the Old Dominion. Choice recipes have been gathered from Virginia homemakers, who have long pleased their families and friends with delicious food. To assure you a successful adventure into Southern cookery and to safeguard Virginia's reputation for good food, the recipes have been carefully tested and selected by friends and members. Virginia Association for Family and Community Education is a working organization of women dedicated to the enrichment of home and family life. Food is an important interest of this organization, but only one. Clubs are a part of the community and carry on a continuous educational program and work with other organizations for community betterment. Deviled Crabs 1 pound crab meat 2 eggs, beaten 1/2 teaspoon salt Dash Tobasco sauce 1 teaspoon chopped parsley 1 tablespoon vinegar or lemon juice 1/4 pound butter 1/2 cup cream 1/4 teaspoon pepper 1 tablespoon Worcestershire sauce 3 tablespoons cracker crumbs Mix all ingredients and pile lightly on prepared shells.
