Hi-Country 21mm Collagen Sausage Casings - These clear 21mm casings are used for snack stick products like pepperoni but also work great for breakfast sausage links. Specially formulated snack stick spices are available from Hi-Country. Our most popular flavor is Pepperoni for your wild game. Collagen type casings are processed to have a consistent diameter throughout its length and are stuffed dry (no soaking). Prepping the casings consists of simply placing the casings in a refrigerator overnight to improve pliability. Casings are shirred (collapsed) when produced and when stuffed expand to their original length. Each package contains 2 clear strands (21mm x 49'). Each casing has a capacity for 10 to 14 lbs. of meat. A 12mm outside diameter stuffing horn is recommended.
