Planting instructions: Just plant the tuber any time the soil is workable before spring. Find a large spot with at least 6 hours of sun a day and well-drained soil with organic matter. This is a perennial, and it will grow to 5 to 10 ft tall. Harvest time is right before Thanksgiving or after first frost to early spring. Each plant will yield about 5 to 8 lbs of sunchokes. Sunchoke will come back every year even if you thought you had harvested every tuber.
