La Quinta Níspero

The loquat fruit is called Níspero where we live. Our family was not familiar with this particular fruit until we moved to a small house with a big yard in the countryside of Ecuador. At first, we fed our animals this fruit because we are not aware of either the health benefits or the delicious gastronomic delights to which the Níspero naturally lends itself. In the Quinta where we live we have several Níspero trees which provide us a nearly endless supply of this wonderful fruit. If you don’t happen to have access to an endless supply of Níspero you can find it at some grocery stores under the name Loquat, Japanese plum, Japanese medlar, or Maltese plum. If you cannot find any Níspero fruit where you live you can replace it with apricot in any of the recipes in this book.
