Tastes of Europe: A Surgeon's Approach to Home Cooking

No one needs another cookbook! But I just wanted to do one. This retirement labour of love reflects my passion for European recipes, many taught to me by my grandmother. From fried bread to osso bucco to tafelspitz this is a highly selected set of recipes from Europe and aims to showcase some of my personal heritage. For my interest, and I hope yours, I have added some history and origins of the recipes, legends, and family vignettes. I give tips and traps and point out where I believe some authors have indulged in overkill. I have tried to explain some of the reasons behind the ingredients, the cooking process and what works and what doesn’t. So many cooking texts insist theirs is the only correct approach. That so many variations of a given recipe exist is surely a testament to the reality that there are many ways to skin a cat!
