Green coffee beans from a single estate in Ahuachapan, El Salvador at altitude between 4500 and 5000 ft. Sealed in an Ecotact bag for maximum water and air resistance. Suitable for long term storage. All of our beans are kept in a cool warehouse sealed in grain pro bags until time of sale, and then portioned into Ecotact bags. We used to vacuum seal them, but the seals often broke during transit and the beans would spill out. Thus, we are constantly improving the process. Honey washed beans have some mucelage left on them after processing, and that mucelage makes the beans have a slightly orange coating which is visible on close inspection. This is a layer of natural sugar which gives the beans a different flavor profile from the simply wet milled lavado variety. These are raw, green coffee beans which are unroasted. We offer them in honey washed, and non honey washed, or wet milled. The difference is when the outer fruit pulp of the coffee is removed, how much of the pulp remains on the bean. The pulp has natural sugars in it, and when the fruit is milled thus removing the beans, they can be dried with some of the pulp on the beans, or washed which removes all or most of the pulp and then dried. When drying honey processed coffee, a longer time is needed because of the mucelage. Typical concrete bed drying can be as short as 3 days, or as long as 15. Ours are dried 15 days. After processing, the beans are packed in grainpro bags, which are the industry standard for transporting coffee beans. The freshness is kept in, the outer elements like pests and moisture are kept out. We transport and export our own product through Tesoros Del Pais S.A de C.V, a company in San Salvador. The coffee is loaded onto a container, shipped to the USA, and stored in a tempature controlled warehouse until it is either roasted, or unpacked and vacuum sealed for direct sale. Raw green coffee is an excellent product for a roaster to use, and these beans can be roasted light, medium, or dark. The honey washed beans especially make a great espressso. We had our first roast done at Jones Coffee of Pasadena, CA, and they decided that light roast was the best, as these beans have a delicate and complex flavor that really comes out without a lot of heat. We have tried them at all roast levels, and they are great at any level, so it mostly is a matter of personal taste. These beans were graded at Los Ausoles labritorio in Ahuachapan, El Salvador. They were ranked an 86, which is an excellent score. Most grocery store coffee is about a 60, and the cupping score depends on a wide range of factors.
