Fresh, genuine wasabi. Must be grated with a wasabi grater (not a ginger or garlic grater). Does not come with grater - that must be purchased separately. Japanese-quality - and grown in the USA. Can be stored for one month - if not grated. Hot, sweet, and vegetal flavor. More nuanced flavor than horseradish. Pair with any protein (think horseradish and prime rib), or noodle dish, or in a sauce or on vegetables. The delivery address must be an address recognized by the USPS. Wasabi root (actually rhizome) is typically trimmed as shown with approximately 2 inches of stem and no roots. (Sometimes rhizomes can have no stems). Most rhizomes are approximately 2 ounces/60 grams in weight. Weight or size does not affect flavor or heat. Once the plant is mature, the plant's flavor and heat is uniform through all rhizome sizes. Of course, we only harvest when the plant is mature. Rhizome must be grated into a paste. We recommend a wasabi-specific grater for maximum heat, flavor and sweetness. We are the largest wasabi farm in the USA and have been growing high-quality wasabi since 2010. This is wasabia japonica. It is not mustard, horseradish or some other similar plant. This is genuine wasabi, originally from Japan and grown to exacting standards in the USA. Orders are harvested on weekends and sent on Monday and Tuesday. Orders received after noon Pacific Standard Time on Fridays will be harvested one week later so there could be a maximum of 9-day delay between ordering and harvesting. We want our customers to receive the freshest wasabi possible. There is no wasabi "season". The plant is harvestable and flavorful the year-round.
